Serves 6
Ingredients
2 cups of firmly packed corainder leaves
2 quarts ice water (8 cups)
1 cup superfine sugar
Juice of 5 ripe limes (about 1 cup)
Dash Anfostura bitters
Ice, to serve
1 In a blender at high speed, puree the cilantro leaves with 1 and 1/2 cups ice water and the sugar for about 2 minutes. Pour twice through a fine mesh strainer.
2 Mix in the remaing 6 and 1/2 cups of water, the lime juice and the bitters.
3 Immediately serve over ice
